Pistachio tree is native to Central Asia, including Iran. Pistachio trees reached Europe from Asia in the first century AD by the Romans. In the 19th century, pistachios were grown commercially in Australia and California.
In 2019, Iran and the United States produced 74% of the world’s pistachios.
Pistachio grows best in hot and dry climates and is tolerant of saline soils. It is said that when irrigating pistachio trees with salt water, good growth can be expected from them. Pistachio trees will not perform well in high humidity.
Cooking with pistachios
Pistachio can be used as one of the raw materials in cooking due to its unique taste.
Pistachios are rich in the antioxidant lutein. And pistachio kernels are hematopoietic due to iron.

Shrimp with pistachio sauce
Chopped pistachios ————– 2 tablespoons
Shrimp ———————– 500 grams
Olive oil ————— 3 tablespoons
Paprika ——————— a teaspoon
Butter ————————- a tablespoon
Ingredients for preparing the sauce
Pistachios (finely chopped) ———— 2 tablespoons
Olive oil ——————- 2 tablespoons
Garlic (finely chopped) ———— a clove
Ginger (powdered) ————- a teaspoon
Black pepper (powdered) ———– as needed
How to prepare
To prepare pistachio sauce: Mix finely chopped pistachios, olive oil, chopped garlic, ginger and powdered black pepper in a suitable bowl and set aside.
Mix chopped pistachios, olive oil and paprika and dip the shrimp in this mixture.
Skewer the shrimp and place the skewers in the hot butter until the shrimp are cooked and discolored.
Then serve them with pistachio sauce.
