Taste one of the best pistachio ice cream with Iranian saffron

Materials used, for 8 people

Pistachio kernels (raw) ………… 1 cup

Ground pistachios …………2/1 glass

Whipped cream …………. 1 glass

Yolk…………………… 4 number

Milk ……………………2 glasses

Sugar…………………. 4/3 glass

Saffron

Vanilla

How to make pistachio ice cream

First, grind 1/4 cup of sugar and a glass of pistachios in a mixer.

Next, put 2 glasses of milk with the sugar and pistachio mixture on the flame to bring to a boil. After boiling, remove the pan from the heat.

Now you can go to the egg yolks. In a bowl, beat the remaining egg yolks and sugar (1.2 cups) with a mixer and gradually add the hot milk. At this stage – if you wish – you can use a little saffron or vanilla (or even a little of both) to give flavor and color to your ice cream.

Put the resulting mixture back on the heat until it boils slowly and thickens for about 10 minutes.

Now transfer the ingredients to a suitable container and refrigerate for 2 hours.

At this stage, pour the whipped cream and chopped pistachios into the ice cream machine. If you do not have an ice cream machine, you can put the ice cream mixture in the freezer and take it out of the freezer and stir every 30 minutes or so.

Do this for 3 to 6 times to make your ice cream mix.


If you want your ice cream to be thicker, you can use a little starch in the milk boiling stage.
